Use the Item Cook Time Overrides function to override the cook times configured in Item Cook Times Maintenance. With Kitchen (AK) selected in the product panel, select Maintenance > Menu > Item Cook Times Override to access the Item Cook Times Override function. The function only appears under the Aloha Kitchen menu.

Group Bar: Settings

Name — Identifies the item cook time override.

Group Bar: Cook Time Override Assignments

Cook time — Specifies the amount of time, in seconds, that an items takes to prepare. The delay time is an indicator for the food prep to have items ready at a specific time. Use this option when one item takes longer to prepare than another. Typically, you specify a delay time for the item that takes the longest to prepare. This time displays on the video monitors to which other items on the order are sent. When you bump an item with a specific delay time, the system initiates a countdown on the video screen. You cannot bump a delayed order until the countdown for the item with the delay time begins. If more than one item on the order has delay time specified, the system uses the longest delay time.

Number — Specifies the ID number of the item.

Name — Specifies the name of the item.

Standard Modifiers tab

Standard modifiers are modifiers you can configure to alter the cook time of the item it is modifying when ordered, either by a percentage or a fixed amount. Typically, this is used for temperature modifiers, such as 'Well Done.' The modifiers must be attached to a modifier group to appear in the list. Use the Standard Modifiers tab to alter the cook time for an item configured on the Item Cook Time tab.

Number — Specifies the ID number of the item.

Name — Identifies the item.

+/- Percent — Indicates the percentage to increase or decrease the cook time of the selected item.

+/- Seconds — Indicates the number of seconds to increase or decrease the cook time for the selected item.

Advanced Modifiers tab

Advanced modifiers are an adjustment to the item cook times based on the combination of the parent item and modifier when ordered together. Use the Advanced Modifiers tab to override the settings on the Item Cook Time and Standard Modifiers tabs.

Combined cook time — Indicates the combined cook time of the selected parent item and modifier.
