Family Style: Portion Matrix (TS only)
Select Maintenance > Menu > Family Style > Portion Matrix to access this function.
Note: You must access Maintenance > Business > Additional Features (Corporate Administration) and select ‘Display Family Style ordering’ under the ‘Options to display’ group bar to expose the Family Style functions and related options.
Define as many matrices as needed to accommodate your various menu items. You configure customer facing names for ‘Type 1,’ ‘Type 2,’ and ‘Type 3’ on the Matrix tab in Maintenance > Menu > Family Style > Plating Types.

Group Bar: Settings
Name — Identifies the portion matrix.
Maximum per plate — Designates the quantity to serve on a single plate to help calculate the number of plates the kitchen needs to serve. This option only works with portion ‘Type 1’ on the Matrix tab, which you use for items served by the piece or quantity, if needed. For example, stuffed mushrooms or bread sticks. If you configure a portion matrix using portion ‘Type 2’ or ‘Type 3,’ leave this blank.
Matrix tab
Add as many records to each matrix as needed to accommodate your highest guest count. The system uses the previous record as the ‘From’ in the range and the current record as the ‘To’ in the range.
Group Bar: Matrix
Guest Count — Designates the ‘To’ range of guests you can serve with the portion size to the right.
Type 1 — Designates the number of portion ‘Type 1’ to serve based on the corresponding guest count. For example, if you normally serve three stuffed mushrooms per a single guest and the guest count is five, type 15 in ‘Type 1.’ ‘Maximum per plate’ works with ‘Type 1’ only, so always use portion ‘Type 1’ for portions involving quantity and plating. For example, ‘Piece’ and not ‘Bowl.’
Type 2 — Designates the number of portion ‘Type 2’ to serve based on the corresponding guest count. For example, if you define portion ‘Type 2’ as Large Bowl, and one large bowl serves 3, type a 2 in ‘Type 2’ to accommodate a guest count of 6.
Type 3 — Designates the number of portion ‘Type 3’ to serve based on the corresponding guest count. You can designate a number in both portion ‘Type 2’ and ‘Type 3,’ if required to accommodate the guest count. For example, if you define portion ‘Type 3’ as a Small Bowl that serves 1, you can type 2 in ‘Type 2’ and 1 in ‘Type 3’ to accommodate a guest count of seven.
